Our Trevor’s Antics in the USA

This time last week, myself, and Anthony Dubber, a good friend of mine, (who I worked with in Antarctica) were boarding a plane at Heathrow airport on our way to Santa Fe, New Mexico, in the USA. We had been contracted to cook for a group of clients working on a freedom project. The job itself had been booked long before I started at Post 16, but due to Covid and lockdown it was postponed until March of this year 2023.

It was a long 24 hour journey, with a 10 hour flight from Heathrow to Phoenix, a two hour flight to Albuquerque, followed by a two hour road trip to Santa Fe.

We eventually arrived at our destination in the early hours of the morning, and checked into a hotel for the night. The following day we were taken to the house where we would be staying and cooking, this is way up in the Rocky Mountains with magnificent Scenery of snow capped mountains and we are very near the top.
The property is stunning and very Mexican in style. We are on our own in the house and have full use of all facilities.

During the last week, we have acclimatised and have been shopping for stores of meat, fruit and vegetables and equipment.
We have been told to be careful of Rattlesnakes, Mountain lions and bobcats, not to mention the hibernating bear in the area.
The weather today is -5°C with fairly high winds, but the sunshine is stunning over the mountain tops. We are seven hours behind the UK so when you are just finishing school, we are just having breakfast.

I hope everything is going smoothly at Post 16 and you are all eating healthy. I would just like to thank Emma and Jo for holding the fort while I am away. I’m sure they’re doing a fantastic job and I really appreciate what they are doing.
